Fish Boil

one dozen small onions, peeled (keep them whole)
---large pearl onions work best
one dozen baby red potatoes, (also keep whole)
1/2 cup salt
4 cod filets cut into large chunks
lemon wedges for garnish
1 cup melted butter
*A large quantity of salt is traditional in this recipe.
Vary the amount to taste.

Bring 2 gallons of water to a boil in a large kettle.
It's best to cook outside between two lounge chairs!
Inviting the neighbors makes it even better!
The entire recipe cooks uncovered.
Add salt and potatoes and boil about 15 minutes.
Add onions and boil, 3 minutes longer.
Add fish and boil 10 minutes longer.
Remove from heat.
Drain into colander.
Serve with melted butter and lemon wedges.
Adding cold slaw and rye bread makes it a perfect meal.

Enjoy with friends and family.
